Fresh Veggies and Roasted Potato

12 New red potatoes washed Quartered (pre-cook them for this recipe boiled til almost done)
1 med onion cut into big chunks
1 red (or yellow) pepper cut into chunks
mushrooms
1 yellow or zucchini squash cut into chunks

mix together next ingredients in a small bowl
1/4 cup oil (or a half if there are many veggies)
2 TBsp roasted Garlic red pepper zip
2 TBsp Greek Isle Seasoning
2 tsp salt

get a cake pan (rectangle baking dish) dish and put all veggies into it, pour your oil mixture on top and mis with hands until all veggies are coated with the oil bake at 400 on top rack until as done as you like them

Romantic Pasta for two

1 box whole wheat fettucini noodles
2 TBSP olive oil
1 med pepper
8 ounces tomatoe sauce
1 can baby corn
1 pkg cherry tomatoes
2 small yellow squash
2 small zucchini squash
1 carton fresh mushrooms
1 medium onion
Parma Zaan Sprinkles (the veg. express)
Cook noodles as directed
and drain
In large skillet add 2 TBSP oil on med heat add veggies and saute (Make sure they are diced into small pieces) when cooked add noodles and heat Serve with the Parma Zaan cheese sub. and add garlic bread and Salad Note from Mom to Ben Use the Veg Express Ranch on toast with "butter" it is good with spagetti dishes

white beans in a crock pot

white beans in crock pot
1 pound white beans (can use lima, northern or navy for this recipe)
1 1/2 quarts water
3 TBSP Roasted garlic and Red pepper Zip
1/2 tsp dried basil
1/2 tsp. chopped dried parsley
1/4 tsp celery seed
Salt and Pepper to taste or if you use neither use substitutes
Place all ingredients in a crock pot let simmer all day on high

cuban black beans and rice

1 1/2 tsp. seasoning salt
1 TBSP lemon juice
2 TBSP Beef like seasoning
1/4 tsp basil
1/2 tsp roasted garlic & red pepper zip
1 tsp onion powder
1 1/2 tsp fake chicken seasoning ( I use La Chikky from veg. exp)
1 1/4 tsp cumin
2 Tbsp Nutritional yeast flakes -( buy from a health food store good sources of B12 )
1 chopped onion
5 Cups water
2 1/2 cups dried black beans

Wash beans and sort out - Soak in water overnight, Add all ingredients cook until done $ hours or so in crock pot serve over rice Taste reat with tofutti sour supreme and chopped green onions

baked kidnaey beans

2 - 30 oz. cans kidney beans rinsed and drained
1 - 28 oz. diced tomatoes
2 medium red bell peppers
1 cup ketchup (if you use it if not leave out)
1/2 cup brown sugar or sucanat
1/4 cup honey
1/4 cup molasses
1 Tbsp beef like seasoning (get at health food store or the veg. express)
2 medium unpeeled red apples, cored and cut into pieces
Combine the beans, tomatoes, bell peppers, ketchup, brown sugar, honey, molasses, beef like seasoning. cook in crock pot on low for 4 - six hours stir in apples and cook 2 more hours. Serve with salad or whatever

Crock pot green peppers

Crock pot green peppers - A+
1 - 10 oz. bag frozen corn
1 - 15 oz. can red kidney beans
1 - 28 0z. can crushed tomatoes
1/4 cup onion, chopped
1 1/2 cups COOKED rice
2 TBSP Bragg liquid aminoes
2 tsp. salt
1/2 tsp pepper
2 cups vegan cheese shredded
4 green peppers, tops cut out and seeds removed

combine all ingredients EXCEPT cheese and green peppers. Then stuff mixture evenly into green peppers reserving the vegan cheese til the end of cooking time. Place the peppers in the crockpot. Put as many as will fit into the bottom and then find a way to make the rest fit. Cover and cook on high 3 - 4 hours or on low 6 -8 hours.
Sprinkle the top of peppers with cheese and continue to cook until cheese is melted.

Crock pot Bean Soup with cornmeal dumplings - A

This is very good but a little more time consuming to make

1 - 15 1/2 oz. can black beans rinsed & drained
1 - 15 1/2 can red kidney beans rinsed & drained
1 - 15 1/2 oz. can garbanzo beans rinsed & drained
1 - 14 1/2 oz. can tomatoes crushed
1 med onion, chopped
1 - 16 oz. package frozen mixeed vegetables
4 cloves garlic minced
1 - 14 1/2 oz. can vegetable broth
1 tsp salt
1 tbsp chili powder
1 tsp pepper
1 tbsp dried prsley
Combine and cook on low 8 - 10 hours
or on high 4 - 5 hours. At end turn up on high and prepare dumplings

Cornmeal dumplings
1/2 cup flour
1/3 cup yellow cornmeal
1 tsp. baking powder
1 Tbsp pure sugar (or sucanut)
the equivelence to one egg (ener G's egg replacement) or if you eat eggs 1 egg
2 Tbsp soy milk
2 tsp oil
mix dry ingredients in one bowl liquid in another bowl then combine the two and stir by hand. drop by rounded spoonfuls onto soup. cover and cook 30 minutes without lifting lid until end of cooking time

These are tried and I added my own grade on my taste preference.

Vegetarian Bean Casserole - B

1 can vegetarian baked beans
1 can butter beans
1 can red kidney beans
1 can stewed tomatoes with Italian seasoning with juice - cut up tomatoes (14 1/2 oz. can)
1 can lima beans
1 cup sliced carrots (or frozen)
1 cup onions diced
1 tsp garlic salt

Cook on low for 4 - 5 hours - then eat!
